The single bait that accounts for more game fish catches in Florida than any other is the Live Shrimp. Live shrimp can be found almost all quality bait shops that are near the coast line. They are of caught in the Gulf of Mexico and shipped across the state to be used as bait.
Mud crabs are originally mangrove dwellers but now widely farmed in ponds with brackish water. They range in size from tiny babies to the giants at about 1.2 kilogram a piece. They have medium to firm textured meat with a delicate sweet flavor. They have much thicker shells than the blue or orange shelled crabs.
Whole baby squid straight out of the sea, these are from the American coast and have tentacles all over the place! They do not need any special tenderising.
They are frozen in a clump so you will have to defrost them all at once.
Char-grill or sauté baby squid for no more than a few minutes and marinate in advance with chilli or chorizo – absolutely delicious!

Crawfish are fully cooked then individually frozen for shipping. Simply thaw, heat, and serve! Heating can be done by steaming or placing in boiling water for approx. 2 minutes! Crawfish are conveniently packaged in mesh boiling bags for reheating. Crawfish may also be thawed and served cold.
